12/15/17 — Soba Noodles

Soba Noodles

 

Ingredients

organic soba noodles (buckwheat noodles)

olive oil

garlic

Mince the garlic.

Let the garlic sit for 10 minutes.

Get the water to a rolling boil.

Stir in the soba noodles until they are covered completely by the water.  Lower the heat to medium.

Set the timer for 6 minutes.

Rinse the soba noodles.  Strain them.

On low, heat the olive oil.

 Sauté the garlic in olive oil.  Stir the garlic continuously for 2-3 minutes.  Then stir in the soba noodles.

Add red pepper flakes/cayenne, salt, and pepper to taste.

Hot Tips:

  • Soba noodles are made from buckwheat or kasha.  Buckwheat is not wheat, and it is gluten free.
  • Do the garlic step first.  Garlic is healthiest when it sits for 10 minutes after it’s been minced.  Then cook with it.
  • You can sauté some vegetables to add to the soba noodles.
