Dr. Gundry’s Pad Thai Recipe

Ingredients

wild shrimp (fresh or frozen; leave the tails on)

1 egg

broccoli slaw

Miracle Noodles (Shirataki noodles)

3 tbsp olive oil

lime juice

2 cloves garlic

1 tsp fish sauce

1/2 cup basil

cayenne pepper

salt

 


 

Preparing the Miracle Noodles (Shirataki Noodles)

Bring the water to a boil.

Put the noodles in a strainer, and rinse the noodles for 2 minutes.

Boil the noodles for a couple of minutes.

Strain the noodles again.

Put the noodles in the dry pan on medium heat.

Stir continuously for 1 minute.  (The noodles won’t burn.  They will pop and sizzle because they are drying out.)

Take the noodles off of the heat, and set them aside.

 


 

Prep the Ingredients

Mince 2 cloves of garlic.

Roughly chop the fresh basil.

Squeeze the juice of 1 lime.

 


 

Sauté

Add 3 tbsp of olive oil to the pan on low heat.

Add 1 tsp of salt.

Add a pinch of cayenne.

Add the garlic.

Sauté the garlic for 2 minutes.

Add the broccoli slaw.

Add the lime juice.

Add the shrimp.

Add the basil.  Stir the mixture for 2 or 3 minutes, until the shrimp begins to get opaque.

Add an egg.  Stir.

Add the Shirataki Noodles.

Add 1 tsp of fish sauce.  Stir.

 


 

Hot Tips

  • Buy wild shrimp.  The shrimp should be peeled and deveined.
  • Leave the tails on the shrimp, and eat the tail.  The tail of a shrimp is one of the best lectin-absorbing compounds there are.
  • Polyphenols benefit your mood and heart.  Basil contains a lot of polyphenols, so eat up!
  • Buy Omega 3 or pastured eggs.
  • The angel hair Shirataki noodles cook the fastest.  The fettuccini Shirataki noodles take the longest to cook.
  • You can add 1/4 cup macadamia nuts to the recipe.

  1. I shall try this – I honestly didnt know how to cook shiratake so this was quite helpful. We do not have brocolli slaw – can I make this from scratch? Or is there a substitute I can use or make, as brocolli is hard to come by too

    1. I’m glad it was helpful, and that you’re going to cook it! 🙌🏻 You can make broccoli slaw from scratch. Use the stalks of the broccoli. Don’t worry if you don’t have them. You can substitute it with another crunchy vegetable of your choice. Part of the broccoli slaw was carrots, so you can grate some carrots, as well. 😊
