Dr. Gundry’s Almost Spanish Omelet

Ingredients

2 shallots

1 sweet potato

part of a bag of frozen spinach

6 eggs

extra virgin olive oil

1/2 tsp paprika

salt

 


 

Prepare the Ingredients

Use the food processor to chop the shallots.

Cut up 1 sweet potato.

 


Prepare the Oven

Preheat the oven to 425 degrees.

 


Sauté

Put 1 tbsp of olive oil in the pan.

Add the shallots.

Add the sweet potatoes.

Add 1/2 tsp paprika.

Add salt.

Add the frozen spinach.

Add another tbsp of olive oil.

Stir.

Crack 6 eggs into the mixture.

The eggs are ready to be stirred.

Stir the eggs into the mixture.

Put the lid on the pan.

Bake the mixture for 7 minutes.

 


Hot Tips

  • I used frozen spinach.  Dr. Gundry’s recipe called for fresh baby spinach.
  • Dr. Gundry added fresh parsley to the mixture.
  • I used organic pasture raised eggs.
