Cauliflower Fried Rice

Ingredients

2 tbsp grass-fed ghee or olive oil

1 onion, thinly sliced

1 inch piece of ginger, freshly grated

1 medium carrot

4 cups pre-riced cauliflower

1.5 tsp cumin

1/2 tsp turmeric

1 tsp rosemary

salt

 


 

Food Prep

Put the onion in the food processor.

Break off a one-inch piece of fresh ginger.

Peel the ginger.

Finely grate the ginger.

The ginger is grated.

Slice the carrot into discs.

Cut the carrot slices into quarters.

Add 2 tbsp of grass-fed ghee to the pan.  Set the stove to medium heat.

Add the onions, ginger, carrots, and riced cauliflower to the pan.

Add 1.5 tsp cumin.

Add 1/2 tsp turmeric.

Sprinkle in some rosemary.

Add salt to taste.
