Paleo Sweet Potato Pie

Pie Filling Ingredients

full-fat canned coconut milk (BPA-free)

yacon syrup

vanilla extract

pumpkin pie spice

Sweet Potatoes Preparation

Preheat the oven to 375 degrees.

Cut the parchment paper to fit the baking sheet.

Cut the tips of the sweet potatoes.  Then rinse the sweet potatoes.

Cut 3 slits in each sweet potato.

Bake the sweet potatoes for 90 minutes.

If you’re not sure if the sweet potatoes are done, check them with a knife.  The knife should go through cleanly, without any residue when it’s pulled out.  Let the sweet potatoes cool.

 


 

Pie Crust Preparation

Put 3/4 cup of arrowroot flour into the blender.

Add 1/2 cup of coconut flour.

Add 1/2 teaspoon of salt.

Add 1/3 cup ghee.

Blend the ingredients.

Transfer the blended ingredients to a bowl.

Add small amounts of water until the mixture starts sticking together like dough.

Grease the pie tin with ghee.

Peel off the sweet potato skins.

Cut the sweet potatoes into smaller pieces before putting them in the blender.

Hot Tips

  • Buy organic ingredients.
  • Buy pastured eggs.
  • If you would like a crispier crust, bake the pie for 60 minutes.

  1. Thanks for the recipe I will give it a try. I love sweet potatoes and we have them a couple of times a week. Lots of vitamin A. We had a sweet potato bake last night, tin each of salmon and corn, parsley, 3 eggs and of course sweet potato. I find it cooks so much fast if its steamed. Yum.
