Cheesy Cauliflower Muffins

1st Set of Ingredients

extra-virgin olive oil

riced cauliflower (frozen)

3 eggs

garlic

nutritional yeast

salt

basil

paprika


2nd Set of Ingredients

cassava flour

aluminum-free baking powder


Prepare Dry Ingredients for Later

In a small bowl, add 1/4 cup cassava flour.

Add 1/2 teaspoon baking powder.

Whisk together the cassava flour and baking powder.

Prepare the Garlic

Peel the garlic, and put it in the mincer.

Squeeze the mincer, and shave off the garlic with a knife.

The more garlic, the better, I say! 🙂  (Let the garlic sit for 10 minutes; this waiting allows more of its healing properties to remain.)

Time to Sauté!

Have your stove on medium-high heat.

Add 1 tablespoon (I add more) of olive oil to your pan.

Add the whole bag of riced cauliflower to the pan.

Add 1/2 teaspoon of salt to the pan.

Stir for 3 – 5 minutes, until the cauliflower is tender.

More to Sauté!

Add 1/4 teaspoon paprika.

Add 1/2 teaspoon dried basil.

Add minced garlic.

Stir for 2 more minutes.  Then, let it cool to room temperature.

Prepare the Oven

Preheat the oven to 375 degrees.

Say Cheese!

Add 1/2 cup nutritional yeast to a bowl.

Crack 3 eggs.

Whisk the eggs.

Add the eggs to the nutritional yeast.

Stir and mix the two.

 

Mix It All Together

Add the nutritional yeast/egg mixture to the riced cauliflower mixture.

Add the cassava flour/baking powder mixture.

Stir until blended.

Muffin Tin Prep

Add oil to the muffin tins.  (I use Bulletproof XCT Oil.)

Add the finished mixture to the muffin tins.

Put the muffin tins in the oven.

Set the timer for 20 minutes, or bake until they are not wet to the touch.  (Mine needed 25 minutes.)  Let the muffins cool at least 5 minutes before serving.

Hot Tips

  • You can use 1/4 teaspoon of dried garlic powder instead of fresh, minced garlic.
  • I used smoked paprika, but the recipe calls for regular paprika.
  • Use pastured eggs, omega-3 eggs, or VeganEggs for the most nutrition.
  • Use organic ingredients when possible.
  • You can use 1/2 cup grated Parmigiano-Reggiano cheese instead of the nutritional yeast.
  • You can add hot sauce to the mixture if you want a little kick!
