Potato-Kidney Bean-Sauerkraut Salad

 

Combine the following ingredients:

sauerkraut

cold-boiled potatoes

onion

kidney beans

olive oil

salt

pepper

 

Directions:

  1. Boil potatoes, and refrigerate overnight.
  2. Cut up potatoes, and place in bowl.
  3. Rinse kidney beans thoroughly, and add to the potatoes.
  4. Squeeze out excess liquid from sauerkraut, and add to the bowl.
  5. Shave onion into tiny slices, and add to the bowl.
  6. Gently mix the ingredients.
  7. Add olive oil, and remix.
  8. Add salt and pepper, and remix.
  9. Serve.

 

Hot Tips:

Boil the potatoes and then cool them without reheating them. ┬áThis way, they act as a prebiotic to help “good bugs” proliferate in your gut.
