Black Bean Hot Dog Soup

Peel the top layer of the 2 onions.

Cut the onions into quarters.

Put the onions in the food processor. Press the button a few times to pulse.

Instant Pot pressure cooker

Add 1 tbsp. of olive oil to the pressure cooker.

Add the onions to the pressure cooker.

Press sauté on the pressure cooker, and mix the onions.

Get a bulb of garlic.

Separate the garlic cloves.

Mince the garlic in a mincer.

The garlic is minced.

Mince 3 or 4 cloves of garlic.

Put the garlic in the pressure cooker.

Sauté the garlic and onion mixture.

Add 1 tbsp. of cumin, and mix.

Add 1/4 tsp. of smoked paprika or chipotle powder, and mix.

Soak 2 cups of black beans in 1 tsp. of baking soda and water (an inch beyond covering) overnight.

(After the overnight soaking) Put the beans in the strainer.

Rinse the beans.

Add the beans to the pressure cooker.

Turkey Bone Broth

Add 2 cartons of any organic broth.

Add 1 bay leaf.

Add 2 tsp. dried oregano.

 

Add salt to taste.

Put the lid on the pressure cooker.  Press the Bean/Chili button.  The pressure cooker will heat and seal.

The timer will count down from 30 minutes.

Let the pressure cooker de-pressurize after the 30 minutes.  The photo shows the timer at 46 minutes after cooking.

You will not be able to open the lid until the silver cylinder goes down (see next picture).

The silver cylinder is down, and the lid is ready to be removed.

Remove the lid after the pot is de-pressurized.

Take a cup of beans out and set aside to add back in later.

Use the wand to smooth out the soup.

Add 4 or more hot dogs.

Add the hot dogs into the pressure cooker, and mix.

Add the beans you set aside to the pressure cooker, and mix.

 

Add salt to taste.

 

Hot TIps:

  • Add cayenne for a little spice.
  • Add cilantro as a garnish.
  • You can smooth out all of the beans if your kids don’t like beans, and call it “Hot Dog Soup.”
